Vinification: 100% destemmed, small open top fermentors, cold maceration 7 days, native yeast, punch downs, on skins for 4 to 5 weeks and basket pressed at dryness.  Aged in 228L and 300L French oak barrels of which 70% were new.  Blended at bottling and bottled unfined and unfiltered. Additional bottle age of 16 months prior to a Fall 2017 release.
